Hye Tasting Experience

The Hye Tasting Room is at the winery in Hye, 1 mile south of US 290 on Hye-Albert Road.

A simple, delightful introduction to the #TxWines of Compass Rose Cellars.  Walk up and try our wines, about 15-20 minutes. Then you can pick a favorite and buy a glass or bottle and enjoy the views of the Hye Overlook.
No appointment necessary. Tastings are available each day until 6pm.

Tasting Menu:

2015 Semillon - All the hallmarks of varietally correct Semillon - waxy mouthfeel, peachy stone fruit palate, and medium full bodied.  Bitter on the finish signaling that this can be laid down for a year or two to integrate. This is a perfect pairing with raw or lightly cooked seafood with an Asian flare.

2015 American Chardonnay - Being the most widely known white varietal, Chardonnay originated in Burgundy, France.  This wine is a blend of Texas and Washington State fruit. This American Chardonnay is unoaked and shows classic varietal bouquet of citrus peel, apple and fig. This is an excellent choice for your Christmas or Winter feast. 

2015 Texas Chardonnay - Sourced from a rare plot of Texas Hill Country chardonnay vines in Mason Texas, the 2015 Compass Rose Texas Chardonnay was aged for 13 months in barrel before being released in the fall of 2016.  Coming in at 13.2%, Winery owner Mark Watson said this level of ripeness was a fine match for 100% new French Oak, which rounded off and supported the green apple and ripe pear flavors, giving a more substantial presence to the wine without burdening it with an overtly buttery characteristic found in many domestic Chardonnays.  Medium-bodied, fresh and lively, this young wine is great now and over the next two years, and would pair well with a variety of gulf coast seafood fare.

2014 Touriga Nacional - Single Varietal expression of this Portuguese grape. Beautiful garnet color.  Floral fragrant nose, fresh cut lilacs.  Soft attack, enveloping and silky textured mouthfeel.  Blueberries and cedar, medium bodied, tannic and long.  This wine is the Anti-turkey pairing. Try this wine with a smoked rack of lamb or dry-aged prime beef. Excellent!

2014 Random Lines - A unique blend of Cabernet Franc, Petit Verdot, and Ruby Cabernet.  The nose is of slight smoke, caramelized sugar.  Baked apple and lemon curd. Medium acidity, medium to high body.  A big red wine that will pair well with Filet Minon.

Our New Tasting Room on Main Street in Fredericksburg is open!  401 E. Main St at Washington St.

Tasting Menu:

2015 Chenin Blanc - With aromas of fresh cut field grasses and a hint of light tropical fruit, this old vine Texas Chenin Blanc is light on its feet, unencumbered by any oaky heaviness. Bright and lively on the finish.

2015 The Conversation - Rich golden color. Nose of honey vanilla and almond.  Medium Full, with brighter notes of tangerine, meyer lemon.  Fruity without any sweetness. Would pair well with tomato and goat cheese flat bread, especially if it featured grilled shrimp!  Complex and interesting. This is our first white blend. It is a blend of All Texas Pinot Gris, Chardonnay and Semillon..

2013 Jaquez - This is the second release of our popular port-style dessert wine.  It is made from 100% Black Spanish, or Jaquez, or Favorite, or any one of many synonyms.  This thick skinned grape has become quite popular in Texas for the production of dessert style wines.
